Chicken lettuce wrap

This delicious chicken stir fry is full of bold flavor and is wrapped in crisp fresh lettuce leaves. This is a light meal or fun appetizer that everyone will love.

  • Combine the diced chicken with corn starch. Refrigerate while preparing the rest of the ingredients.

  • Combine all seasoning ingredients together and set aside.

  • Heat olive oil in a pan over medium heat. Add the white ginger, garlic and green onion and cook until fragrant, about 2 minutes.

  • Add the chicken and cook until almost cooked, about 3-4 minutes. Add chestnuts, pepper and sauce. Cook on slow heat for 2-3 minutes or until the chicken is cooked.

  • To serve, fill a spoonful of warm chicken in lettuce leaves. Add the desired toppings and drizzle some hoisin sauce.

If you have lettuce wraps on PF Changs, serve with crispy rice flour. I chose not to include rice noodles in this recipe to make it healthier. If you want to add them, they are very simple and can be blown up!
Heat 2 cups of vegetable or peanut oil to 350°F. Separate the noodles and place them in. If crisp right away, your oil is ready. Drop the noodles in hot oil in small batches until they become crisp (in just a few seconds). Drain tissue. Serve with lettuce wraps.
